from a bygone day, but it is funny funny funny. Is Charlie
really as evil as this makes him look?

Ambiance: Mamou
is smack in the middle of the Cajun Prairie and Charlie’s Meat
Market is smack in the middle of Mamou. This is a tiny little
store/meat market serving people in the immediate neighborhood and
beyond. As we walked in the front door, the man coming out held the
door for us and, somehow sensing we were in search of boudin,
offered his endorsement: “This is the place for some great boudin,
you can count on it.” Yep, this is a locals place. Location:

Price: $3.09 lb.
Presentation: A man boy with
short hair will happily pull the link from a warm bath, slice it,
carefully wrap it in butcher paper.
Casing: A sheer and
crisp casing. Delightful.
Meat/Rice Ratio: More meat
than rice. Texture: Is
it moist or is it dry? Could it be both? The link is so
tightly bound that a slightly spongy texture is the result.
Plenty of meat but no visible veggies of any kind.
Spice: Mild/Medium Overall Flavor: A
wonderful aroma fills the car as we open the butcher paper holding
our links. This really is nice mash of meat rice and
seasonings, thought it may have had a touch too much salt.
While there are no visible veggies, the overall flavor is porky and
pleasant to the pallet.
Comments: A nice place in a
nice part of the state. This attractively pale brown link
promises to satisfy your cravings for a hot link. AND . . . .
. they have a drive through boudin window!!!!


Yes. This place is tiny.
