Ambiance: The
name says it all. This really is on a corner in the country
and it is a rustic and wonderful place. Rumor has it that they
will expand in the near future. No doubt that will be good for
business, but the rustic, "country" feel may suffer a bit.

up in large pieces of thin foil
Casing: A bit elastic.
Good for squeezing.
Meat/Rice Ratio: Seemingly
more meat than rice
Texture: Creamy. Rice
and meat broken down to the point of being almost indistinguishable
from one another.
Spice: Mild/Medium Overall Flavor: A
delicious flavor blend of ingredients with a rich flavor that is
marked by black pepper and a few lonely, but nice and crunchy, green
onions.
Comments: A enjoyable
flavor is somewhat compromised by an overly smooth texture. Even so,
Mike's is certainly worth your time and their fist-sized boudin
balls are some of the largest around. Make sure to pick up an
egg sandwich too (why you ask?: egg, ham, bread, mayo = yum!).
It is also worth mentioning that Mike's took home a number of
awards at the 2008& 2009 Boudin
Cook-Off where they put their products up against the top boudin
makers in the area.
