Special Review
-- The Parrain Special is a sandwich served exclusively at Johnson's
Boucaniere in Lafayette, LA. It consists of a smashed grilled
cheese sandwich stuffed with a boudin ball and a shot of Johnson's
homemade bbq sauce. They make a couple of stuffed grilled cheese
sandwiches at Johnson's---one with pulled pork and another with
brisket---but the Parrain is truly a boudin lover's special. The bun
is nothing more than a hamburger bun and, though the sandwich looks
rather small, it packs a huge amount of flavor. The harmonious melding
of the cheese and the smashed boudin ball is brought together with the
bbq sauce so that the sandwich truly is greater than the sum of its
parts. They only make boudin balls on Saturday, thus you can
usually only get the sandwich on Saturdays. However, Johnson's
will be featuring the Parrain at the 2011 Roadfood Festival in New
Orleans at the end of March.
