Ambiance:
This is off the beaten path; right in the middle of the Cajun
Prairie. The
place looks like a casino from the outside, but don't fret.
Inside you'll find a well stocked grocery store with an excellent
specialty meat counter in the back. They must work the smoker
overtime, because the smoked meat case if packed full of all
varieties of smoked meats. Location:

Presentation: The mysterious
butcher man gets and wraps the link while he's out of view. But
. . . . .it is
wrapped snuggly in a double layer of white butcher paper.
Casing: The casing is thin and it is crisp.
Meat/Rice Ratio: More rice
than meat. Texture: Full
grains (and bits too) of rice in this wet link of boudin.
There may only be small amounts of meat matter, but those little
shreds of pork give a lot of texture and flavor.
Spice: Hot Overall Flavor: Now,
there's some grease here; can't deny that, but guess what adds the
flavor? Flavor, Flavor, Flavor. There's also a heavy parsley
and bell pepper smell and you'll find little pieces of bell pepper
everywhere. It is a great combo and a great link.
Comments: Yum. It may
not be the healthiest link, but it is tasty.
