Ambiance: With
a stove behind the counter and a meat case too, the ambiance of this
otherwise gas station minimart seems to be of a place that is
conflicted with what it wants to be and what it needs to be. There
isn't much else around, the main drag of Elton is still down the
road, and I'm sure it isn't as much of a main drag as it used
to be. Location:

The Boudin
Price: 2.99 lb.
Presentation: If it isn't
in the heating area with the multitude of fried foods, they'll pull
a hot link out of a pot sitting on the stove directly behind the
front counter. Wrapped in
foil, it'll stay warm for a good long time. Casing: Surprising
it is both thin and rubbery.
Meat/Rice Ratio: More meat
than rice. Texture: Dryish with large
and small bits of rice held in place by a triturate meat blend. The
rice is well cooked and is not gummy at all and there are even bits
of crisp green onion.
Spice: Mild/Medium Overall Flavor: A
nice clean flavor which is marked by the sweetness of the inclusion
of higher-than-average amounts of paprika.
Comments: A truly huge link of boudin that will
certainly satisfy your boudin cravings. I look forward to my
next taste of this good link.
